building the business from the ground up, but Pierrick also took
great pride in being an Ambassador of “French” pastry to a very
appreciative American audience.
Sure, Palm Springs is no Paris, but the sunny California town
proved every bit the equal to the City of Lights when it came to
romance. One day, Pierrick was introduced to a lovely French lady
named Vanessa. She loved the shop, the pastries and soon would fall
in love with the chef. The two became inseparable and would later
marry and immigrate to Melbourne after stops in France and Boston.
Throughout his career, Pierrick’s circuitous pastry voyage has
afforded the chef unparalleled opportunities to experience a vast
array of cultures, culinary perspectives and as we mentioned, the
chance to work side-by-side with titans in the world of gastronomy.
Imagine what can be absorbed during 14 months at the Plaza Athenee
in Paris? Obviously, a whole lot. Pierrick’s many awards and
recognitions abound and he has been honored by Les Toques Blanches,
Les Dames Escofier and featured in Thuries Gastronomie magazine
in France.
One to always be teaching, his team at Le Petit Gateau is expected
to perfect every item on the menu but in doing so, Boyer’s kitchen
atmosphere is one of open communication and instruction. Yes, he
demands perfection, and the best from his team, but the even keeled
chef does so with a general interest in promoting his homelands
culinary heritage. Always the Ambassador, what follows is our
conversation with Chef Pierrick.
