Just before service, place the cold almond mousse in a pastry
bag fitted with a round tube and pipe beads or lines on top of
the meringue. Arrange a few fresh raspberries on top of the
cream and top with another meringue. Finish with a
fresh raspberry and a piece of gold leaf. Serve immediately.
制作步骤
装盆食用前,先将冷冻的杏仁慕丝放在接有圆形小管的塑料袋
中,在蛋白酥皮卷表面裱出珍珠串状或直线状图案。在奶油的
顶端点缀几颗新鲜的覆盆子,并盖上一块蛋白酥皮卷。最后用
新鲜的覆盆子和一片金色叶片作点缀即可食用。
